Rubatà of Chieri, are breadsticks, a savoury bakery product typical of cooking in Piedmont. Their name comes from Piedmontese dialect, in which it means “fallen”, referring in effect to the technique used to prepare them. To be exact, this refers to the technique of the baker in taking the freshly hand-rolled breadsticks with their tips and rolling them around their thumbs with the palms of the hands closed together, then letting them “fall”, or rather “rubatè” in dialect, gently but firmly on the rolling board to make the dough more compact. They are 1 – 1.5 centimeters in diameter and easy to recognise because of their knobbly appearance, due to them being prepared by hand. There are various recipes, handed down from father to son, and the secret of their preparation lies in the dough. It is the dosage of the ingredients and the water from around Chieri which makes them particularly tasty. The Rubatà of Chieri are included on the list of Italian traditional agri-food products published by the Ministry for Agricultural, Foodstuffs and Forestry Policy. The Rubatà should not be confused with another protected variety of traditional breadstick, called the Grissino Stirato, or stretched breadstick, another product typical of Chieri but invented more recently. The difference is in the dough, which is not worked by rolling, but is stretched by the baker.

The hills around Turin form an extremely beautiful landscape, with gentle slopes, ancient villages, castles and farms. The whole of this area is where the grapes are grown for the Freisa of Chieri. This is a well-known, classic wine, with a ruby-red colour, but not too deep, and an aroma including raspberry and violets. It tastes dry or medium-sweet and is cool and pleasant and comes in the following varieties: Freisa Dry, Freisa Superior (1 year ageing) and Freisa Medium-Sweet. The Freisa is a vine that is indigenous to Piedmont and has been grown here since the XVIIIth century.
The Freisa of Chieri comes from grapes grown in vineyards exclusively, 100% Freisa and exclusively from land in the municipalities of: Chieri, Pecetto Torinese, Pino Torinese, Pavarolo, Baldissero Torinese, Montaldo Torinese, Mombello Torinese, Andezeno, Arignano, Moriondo Torinese, Marzentino and Riva presso Chieri.
The D.O.C. label has been authorised since 1973. It goes well with the local dish of “fritto misto”, mixed fried food and its well-balanced, dry taste is ideal with first courses and roasts.

Focaccia of Chieri
The focaccia is a sweet bread product, typical of Chieri, with its own unique flavour. Made of simple, honest ingredients, such as flour, milk, butter, sugar and egg, the focaccia of Chieri smells and tastes delicious. It is eaten especially at the end of a meal, and tastes even better if accompanied by local Freisa wine.
The Baci of Chieri
The “Baci Chieresi” (Chieri kisses) and “Genzianelle” (Gentian flowers) are delicious little creme-filled chocolates, that manage to pass on the image of a city full of promises to anyone who receives them.
The Umbertini
“Umbertini” are tasty, soft macaroons, flavoured with orange blossom, that trace their history back to Prince Umberto of Savoy.
The Brut e Bun
Another typical, local sweet product is the “Brut e Bun” (The Ugly and the Good). These are based on hazelnuts and reflect the sober yet delicate tastes of the people of Chieri.
